Thai Catfish Soup

- 1 catfish (about half a pound prepared weight or other kind of fish) shopping list
- 2 cups fish stock shopping list
- 1 tablespoon galangal, julienned shopping list
- 1 tablespoon lemon grass, thinly sliced shopping list
- 1 tablespoon coriander/cilantro leaves shopping list
- 1 tablespoon thai chile peppers, thinly sliced shopping list
- 4 tablespoons fish sauce shopping list
- 4 tablespoons lime juice shopping list
- 1 can staw mushroom shopping list
- 3 long green bean shopping list
How to make it
- Bring the stock to a simmer. Add the galangal, lemon grass, fish sauce, lime juice, mushroom, green bean and bring back to the simmer.
- Clean the fish and cut it into 1" steaks, then divide them, removing the bones. Add the fish to the soup and bring back to a very gentle simmer, and poach the fish for 3-4 minutes (until just cooked) top with cilantro and chilli peppers.
