How to make it

  • Add butter, cocoa powder, evaporated milk and sugar to 2-3 quart heavy sauce pan.
  • Cook over moderate heat, stirring frequently until smooth.
  • Bring to a rolling boil, stirring constantly, until mixture reaches soft candy stage on a candy thermometer. About 225f degrees.
  • Remove from heat and add old fashioned oats, 1 tsp vanilla and mix well.
  • Drop by tablespoons onto wax paper to cool.
  • TIP: Do not make on humid days, as the cookies will not set up.
  • They should look glossy when dropped, but will not when cooled.
  • Store in air-tight container until gone.
  • About 1 hour at my house!
