Aunt Sarahs Boiled Cookies Recipe
A no-bake, boiled cookie that has been made in my family for years. My Kids favorite!!

Ingredients
  • 1 stick butter, salted
  • 1/2 cup cocoa powder
  • 1/2 cup evaporated milk, (not condensed)
  • 2 cups granulated sugar
  • 3 cups Old Fashioned Oats, or rolled oats( not Quick Oats)
  • 1 tsp vanilla extract
  • wax paper
  • candy thermometer

Directions
  1. Add butter, cocoa powder, evaporated milk and sugar to 2-3 quart heavy sauce pan.
  2. Cook over moderate heat, stirring frequently until smooth.
  3. Bring to a rolling boil, stirring constantly, until mixture reaches soft candy stage on a candy thermometer. About 225f degrees.
  4. Remove from heat and add old fashioned oats, 1 tsp vanilla and mix well.
  5. Drop by tablespoons onto wax paper to cool.
  6. TIP: Do not make on humid days, as the cookies will not set up.
  7. They should look glossy when dropped, but will not when cooled.
  8. Store in air-tight container until gone.
  9. About 1 hour at my house!
