This is a great little recipe; simple yet impressive . All the ingredients are pretty easy to find but fresh crab meat is the key. the pasteurised crab in the refrigerated section of your local supermarket or deli can be used,

Ingredients
  • Crab, Dill and Mandarin Pastry Cups
  • 2 x 310 gram (11 oz) tins of mandarin segments (drained)
  • 30 pastry cups
  • 7 oz crab meat
  • 2 tbsp mayonnaise
  • 1 tbsp fresh cream
  • 2 tbsp fresh dill chopped
  • Fresh dill sprigs (for garnish)
  • Zest of 1 lime
  • Sea salt
  • Black pepper

Directions
  1. Carefully pick through the crab meat and remove any remnants of shell
  2. Place the crab meat into a medium mixing bowl.
  3. Add the mayonnaise, cream, chopped dill and lime zest.
  4. Fold until combined.
  5. Spoon into pastry cups until half full.
  6. Garnish with 1 small mandarin segment and 1 sprig of dill, (some of the segments may be too large and need to be cut down).
