How to make it

  • Prepare a syrup by bringing the water and 1/4 cup honey to a boil. reduce heat, and simmer for 5 minutes. Let cool.
  • Preheat overn to 350 degrees. Place cupcake papers in a 12 muffin tin.
  • with the back of a spoon, press the cottage cheese hrough a strainer into a large bowl. Add 1/2 cup honey and the almond extract. Mix well. Beat in the eggs, one at a time. stir in the flour and a pinch of salt. Mix the almonds into the batter and pour into muffin tins. filling the papers to the top.
  • bake until the tops are puffed and golden and a toothpick inserted in to the centers comes out clean, about 45 minutes. Spoon honey syrup over the hot cakes. Cool in the tin. The cakes will shrink slightly. Put them on a platter and chill in the refrigerator for 2 to 3 hours before serving.
