Old recipe. Delicious applesauce cake made with brown sugar, dates, pecans and spices. Iced with a cream cheese icing.

Ingredients
  • 1 stick unsalted butter
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3 cups applesauce, *divided use*
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1 cup chopped dates
  • 3/4 cup chopped pecans
  • CREAM CHEESE ICING
  • 3 ounces cream cheese, softened
  • 1-2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Directions
  1. Grease and flour 9 X 13 inch baking pan
  2. In a large mixing bowl, cream butter and sugar
  3. Add vanilla and eggs, and beat again
  4. In a saucepan, heat 2 cups applesauce and add to sugar mixture
  5. Beat thoroughly
  6. Combine flour, baking soda, salt and spices
  7. Add to the sugar mixture, beat thoroughly
  8. Add remaining 1 cup applesauce (not heated), beat 1 minute more
  9. Stir in dates and pecans
  10. Pour into prepared pan and bake 350 degrees for about 45 minutes or until toothpick inserted in middle comes out clean
  11. Remove from oven and cool
  12. Top with cream cheese icing
  13. CREAM CHEESE ICING
  14. Cream butter and cream cheese together
  15. Add powdered sugar
  16. Beat until smooth
