Chocolate Mocha Cheesecake Low Carb Recipe
I loved making this delicious pie. It has a slight taste of coffee which gives it zing! You can use this with or without a crust. If you use a crust, I suggest a graham cracker one.

Ingredients
  • 12 ounces cream cheese, softened
  • 8 ounces heavy cream
  • 3 packets sugar free hot cocoa mix
  • 1 T unsweetened cocoa powder
  • 2 T. instant coffee crystals
  • 8 packets of artificial sweetener
  • 1 envelope Knox unflavored gelatin
  • 1/2 cup boiling water

Directions
  1. Dissolve the gelatin into the water and stir in the coffee. Put in the freezer for a few minutes to cool. Whip the cream and set aside. In another bowl, add the cream cheese, sweetener, and coca mix. Mix well. When coffee/gelatin mixture is just slightly warm, add it to the cream cheese mixture and mix well. Lightly mix in the whipped cream and pour into a pie plate. Let it set up in the refrigerator for a few hours.
