  • ------For 2 cups gingered cranberry sauce you will need----------
  • 3/4 cup apple juice
  • 3/4 cup sugar
  • 3 teaspoon finely minced fresh ginger
  • 2 cups whole cranberries
  • ------For 2 cups cranberry mint sauce you will need---------
  • 1 cup orange juice
  • 1cup sugar
  • 1 1/2 teaspoon dried mint or 1 1/2 tablespoon fresh mint leaves minced
  • 2 cups whole cranberries

Directions
  1. ---------Gingered Cranberry Sauce------------
  2. Combine apple juice, sugar and 1 teaspoon fresh ginger in a sauce pan.
  3. Bring to a boil, stirring until sugar is dissolved.
  4. Pick over and wash cranberries. Add to apple juice mixture.
  5. Cook 5 minutes until berries pop. Mash some of the berries. Remove from heat. Cool 5 minutes. Add remaining 2 teaspoons minced ginger.
  6. serve at room temperature or chill.
  7. ---------Cranberry Mint Sauce------------
  8. Combine the orange juice and sugar in a sauce pan.
  9. Bring to a boil, stirring until sugar is dissolved.
  10. Pick over and wash cranberries. Add mint and cranberries to orange juice mixture.
  11. Cook 5 minutes until cranberries pop. Mash the berries with a spoon while cooking. Remove from heat and cool.
  12. Serve at room temperature or chill.
