Gingered Cranberry Sauce and Cranberry Mint Sauce

- ------For 2 cups gingered cranberry sauce you will need---------- shopping list
- 3/4 cup apple juice shopping list
- 3/4 cup sugar shopping list
- 3 teaspoon finely minced fresh ginger shopping list
- 2 cups whole cranberries shopping list
- ------For 2 cups cranberry mint sauce you will need--------- shopping list
- 1 cup orange juice shopping list
- 1cup sugar shopping list
- 1 1/2 teaspoon dried mint or 1 1/2 tablespoon fresh mint leaves minced shopping list
- 2 cups whole cranberries shopping list
How to make it
- ---------Gingered Cranberry Sauce------------
- Combine apple juice, sugar and 1 teaspoon fresh ginger in a sauce pan.
- Bring to a boil, stirring until sugar is dissolved.
- Pick over and wash cranberries. Add to apple juice mixture.
- Cook 5 minutes until berries pop. Mash some of the berries. Remove from heat. Cool 5 minutes. Add remaining 2 teaspoons minced ginger.
- serve at room temperature or chill.
- ---------Cranberry Mint Sauce------------
- Combine the orange juice and sugar in a sauce pan.
- Bring to a boil, stirring until sugar is dissolved.
- Pick over and wash cranberries. Add mint and cranberries to orange juice mixture.
- Cook 5 minutes until cranberries pop. Mash the berries with a spoon while cooking. Remove from heat and cool.
- Serve at room temperature or chill.
