Chinese Fried Rice

- 1 1/2 cups long grain rice (washed thoroughly) shopping list
- green onion shopping list
- 2 eggs shopping list
- baby bok choy (to taste) shopping list
- 1 tbsp salt shopping list
- soy sauce shopping list
- vegetable oil shopping list
How to make it
- Cook rice as usual, on the stove top or in a steamer. Remove and let cool.
- Chop green onions, and bok choy.
- Heat vegetable oil in a wok or large skillet, on high heat.
- Add the white stems of the green onions, bok choy, and salt.
- Crack 1 egg into mixture and stir vigorously for 10 seconds or until cooked. Make sure you don't leave it in big clumps.
- Add rice, stir continuously.
- Make a well in the middle of the rice and add the second egg, try to coat all the rice in the egg.
- Add the last of the onion and soy sauce to taste and serve hot.
- Enjoy!
