How to make it

  • Cook rice as usual, on the stove top or in a steamer. Remove and let cool.
  • Chop green onions, and bok choy.
  • Heat vegetable oil in a wok or large skillet, on high heat.
  • Add the white stems of the green onions, bok choy, and salt.
  • Crack 1 egg into mixture and stir vigorously for 10 seconds or until cooked. Make sure you don't leave it in big clumps.
  • Add rice, stir continuously.
  • Make a well in the middle of the rice and add the second egg, try to coat all the rice in the egg.
  • Add the last of the onion and soy sauce to taste and serve hot.
  • Enjoy!
