Chinese Fried Rice Recipe
My attempt at restaurant style fried rice, I think it well, my friends really enjoyed it.

Ingredients
  • 1 1/2 cups long grain rice (washed thoroughly)
  • green onion
  • 2 eggs
  • baby bok choy (to taste)
  • 1 tbsp salt
  • soy sauce
  • vegetable oil

Directions
  1. Cook rice as usual, on the stove top or in a steamer. Remove and let cool.
  2. Chop green onions, and bok choy.
  3. Heat vegetable oil in a wok or large skillet, on high heat.
  4. Add the white stems of the green onions, bok choy, and salt.
  5. Crack 1 egg into mixture and stir vigorously for 10 seconds or until cooked. Make sure you don't leave it in big clumps.
  6. Add rice, stir continuously.
  7. Make a well in the middle of the rice and add the second egg, try to coat all the rice in the egg.
  8. Add the last of the onion and soy sauce to taste and serve hot.
  9. Enjoy!

Alterations


Put the rice in the fridge overnight in an open bowl. It is much easier to work with when it is drier because it soaks up liquid easier.
