Bubbas Best Red Sauce Recipe
A spicy creole italian tomato sauce learned in New Orleans.

Ingredients
  • One pound ground chuck
  • One large 28 oz can of crushed tomatoes, preferably Muir Glen
  • One 15 oz can tomato sauce, preferably Muir Glen
  • One 6 0z. can of tomato paste, preferably Muir Glen
  • One cup of dry white wine
  • One third cup chopped onion
  • Four cloves garlic, minced
  • One teaspoon salt
  • One half teaspon black pepper
  • One quarter teaspoon cayenne pepper
  • Two tablespoons italian/creole seasoning (or just italian spices)
  • Two bay leaves

Directions
  1. Brown ground beef in large skiillet
  2. Add in onion and brown with meat
  3. Add in garlic and brown with meat
  4. Make a well in meat mixture and fill with tomato paste
  5. Sear tomato paste, stirring to mix with meat
  6. Add in spices and sear with meat mixture
  7. Thin beef tomato/beef mixture with white wine
  8. Stir in tomato sauce
  9. Stir in crushed tomatoes
  10. Let simmer for one hour, adding white wine as needed if sauce gets too thick
  11. Stir in crushed tomatoes
  12. Let simmer for one hour, adding white wine as necessary to thin.
