YEARNING FOR MORE CROCK POT COWBOY CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gardner Estate in Frisco, Texas in 1994.

Ingredients
  • 1 onion chopped
  • 1-1/2 pound ground chuck browned and drained
  • 6 medium potatoes sliced
  • 1 can red beans
  • 1 can tomatoes mixed with 1 can tomato soup
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 1 clove garlic

Directions
  1. Put chopped onion in bottom of crock pot.
  2. Layer with browned ground beef, sliced potatoes and beans.
  3. Spread tomatoes over all.
  4. Season with salt, pepper and garlic then cover and cook for 9 hours on low.
