Cinnamon Swirl Yogurt French Toast Recipe
CINNAMON SWIRL YOGURT FRENCH TOAST This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Bailey Estate in Dallas, Texas in 1982.

Ingredients
  • 2 whole medium eggs
  • 4 egg whites
  • 1 cup milk
  • 1⁄2 teaspoon cinnamon
  • 8 pieces cinnamon swirl bread
  • 16 ounces plain yogurt
  • 5 tablespoons maple syrup
  • 2 cups coarsely chopped fresh fruit (grapes, strawberries, oranges, blueberries, peaches)

Directions
  1. Combine yogurt and maple syrup in small mixing bowl and refrigerate.
  2. In medium bowl beat eggs, egg whites, milk and cinnamon.
  3. Preheat a nonstick skillet over medium heat and lightly coat with nonstick cooking spray.
  4. Dip each piece of bread into the egg mixture and coat thoroughly.
  5. Place in skillet and cook for 2 minutes on each side.
  6. To serve cut warm toast on the diagonal and arrange on serving plate.
  7. Top with fruit and then the yogurt mixture.
