LEMON CAKE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darwin Estate in Allen, Texas in 2001.

Ingredients
  • 6 tablespoons all purpose flour
  • 6 tablespoons butter melted
  • 2 cups sugar divided
  • 4 eggs separated
  • 1-1/2 cups milk
  • Grated peel of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Confectioners’ sugar

Directions
  1. In large mixing bowl combine flour, butter and 1-1/2 cups sugar.
  2. Beat egg yolks then add to flour mixture.
  3. Add milk lemon peel and lemon juice mixing well.
  4. In separate clean bowl beat egg whites until stiff.
  5. Slowly add remaining sugar while beating then fold into batter.
  6. Pour into greased baking dish.
  7. Place baking dish in shallow pan of hot water and bake at 350 for 55.
  8. Serve warm with dusting of confectioners’ sugar on top.
