Tortellini With Bacon And Cheese Recipe
TORTELLINI WITH CANADIAN BACON AND PEAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stuart Estate in Grand Saline, Texas in 1991.

Ingredients
  • 1 pound tortellini
  • 1-1/2 sticks butter
  • 1 cup heavy cream
  • 5 thin slices Canadian bacon julienned
  • 1/2 cup cooked peas
  • 1 cup fresh grated parmesan

Directions
  1. Cook tortellini in 4 quarts salted boiling water for 7 minutes until tender and drain.
  2. In heavy skillet melt butter over low heat then add tortellini and stir to coat with butter.
  3. Add heavy cream and Canadian bacon then cook mixture until cream thickens.
  4. Blend in peas, parmesan cheese and pepper then stir until cheese is melted.
  5. Serve pasta immediately with a dash of additional parmesan cheese.
