Mock Tuna Alfredo Fettucine Recipe
I have been making this for awhile now and so enjoy it! I am not crazy abut tuna, but in here it is so good. I am sure you can use chicken, salmon anything really as a substitute!!

Ingredients
  • 12 oz uncooked fettucine
  • 2 tbsp butter
  • 1-2 cloves garlic minced
  • 1 1/2 cups 1 % milk
  • 1 1/2 tbsp flour
  • 1/3 cup parmesan cheese
  • 1/2 tsp dried basil
  • 1/4 tsp each salt and pepper
  • 1 can of tuna drained
  • 1/4 cup low fat sour cream
  • 3/4 cup frozen peas, thawed
  • 2 tdsp chopped parsley

Directions
  1. Cook your fettucine until al dente. drain and return to pot
  2. While pasta is cooking, prepare the sauce!!
  3. Melt butter in a meduim saucepan.
  4. Add the garlic and saute for 1 minute
  5. Mix the milk and flour together in a small bowl until smooth
  6. Add to the garlic
  7. Increase heat to get a nice simmer and stir until bubbly and thickened about 4-5 minutes
  8. reduce heat to low
  9. stir in parmesan cheese, basil, salt and pepper
  10. cook for 1-2 minutes until cheese is melted
  11. stir in tuna. peas and sour cream
  12. cook until heated through

Alterations


Serve this sauce over cooked fetuccine pasta?? You forgot to mention that!!
sprinkle with more parmesan to taste!!
And add 1/4 cup white wine to sauce during simmer...makes it taste much better...
