Chocolate chip cookies with a little pizazz

Ingredients
  • 1 cup oil
  • 2 tablespoons butter
  • 1 cup white sugar
  • 0.750 cup brown sugar
  • 2 eggs
  • 2 tablespoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups milk chocolate chips
  • 1 cup crushed pistachios

Directions
  1. Preheat oven to 200 degrees C.
  2. Crush Pistachios
  3. In a large bowl, mix together the oil, butter, brown sugar and white sugar until you've got it well mixed and most of the brown sugar lumps are gone or small.
  4. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .
  5. Mix in the chocolate chips and pistachios.
  6. Add the flour, salt, and baking soda and mix well.
  7. Drop by rounded spoonfuls onto cookie sheets.
  8. Bake for 8 to 10 minutes in the preheated oven, until light brown.
  9. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Just printed it out...this will be made soon. I like chunky nuts though, will crush half and use the rest as I would walnuts or almonds. This rocks!
