Ingredients
  • 1/4 liter water
  • 1 water glass of banana flour
  • 50 grams butter (we use camel butter traditionaly...joking!)
  • 1/2 teaspoon salt
  • 4 eggs lightly beaten
  • 1 teaspoon vanilla
  • a drop of orange blossom oil or rose water
  • some olive oil handy as well if you make a mistake and need to de-flake the dough :)
  • oil for frying

Directions
  1. Boil the water and butter.
  2. Let the mixture coat the pan then remove from heat.
  3. Add the flour, stirring continuously with a wooden spoon.
  4. Return to the heat, stirring continuously again until the flour comes away from the sides of the pot and forms a ball.
  5. Remove from the fire and add the vanilla, then add the beaten eggs.
  6. Mix thoroughly into the dough.
  7. Drop by spoonsful into hot oil and fry until puffy. Drain immediately and dust with fairies dust or some cinnamon sugar and honey will do just fine!

OK... I'm gonna fall for this. For real banana flour? Or are you joking? It's like a fried cream puff?

You can use plain flour or wheat flour but just change the water amount until it sticks to the spoon. the dough will differ in texture, but i am surprised no one has heard of banana flour... it is very normal in Ecuadorian desserts... o_o
