Bitter Chocolate Truffles Recipe
Great alternative to overly sweet treats for a chocolate lover. The bitter chocolate accents the sweetness of the almonds and compliments the sea salt, with a mild smoky finish.

Ingredients
  • 1 lb 100% cocoa baking chocolate
  • 1 lb Special Dark Chocolate (I used Hershey's)
  • 1 lb butter
  • 5 oz blanched slivered almonds
  • 3 TBL gray sea salt
  • 1/2 lb unsweetened cocoa powder
  • 2 TBL chipotle powder
  • 2 TBL smoked paprika

Directions
  1. Toast almonds lightly. Set aside to cool.
  2. Place baking chocolate and dark chocolate with butter in a double boiler. Stir until melted and thoughroughly combined. Remove from heat and add almonds.
  3. Place bowl in an ice bath and continue to whip slowly until mixture begins to cool. Add sea salt and mix thouroughly.
  4. Place mixture to cool until very firm. (Overnight is fine.)
  5. Mix cocoa powder,chipotle powder and paprika.
  6. Using a small scoop, Make 1/2 oz balls of the cooled truffle mixture and drop into cocoa mix.
  7. Coat lightly and store or serve.
