How to make it

  • Mix beef, salt and pepper.
  • Let set briefly about 10 minutes to season.
  • Heat oil on high heat in a skillet and stir-fry beef until browned yet still tender and moist.
  • Remove to a plate.
  • Add onions and more oil if needed to hot skillet.
  • Sauté until translucent.
  • Add garlic and continue sautéing until garlic is fragrant.
  • Add beef and stir in tomatoes and thyme.
  • Stir until heated through.
  • Stir in stock.
  • Bring to simmer.
  • Simmer covered 10-15 minutes.
  • Add okra and simmer another 20-30 minutes.
  • Serve over rice.
