Beef and Okra Jamaican Stir Fry

- 2 pound beef shoulder sliced thin across grain shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 tablespoons vegetable oil shopping list
- 1 white onion thinly sliced shopping list
- 2 clove garlic minced shopping list
- 2 tomatoes chopped shopping list
- 1 teaspoon thyme shopping list
- 1 cup beef stock shopping list
- 1 pound okra chopped shopping list
How to make it
- Mix beef, salt and pepper.
- Let set briefly about 10 minutes to season.
- Heat oil on high heat in a skillet and stir-fry beef until browned yet still tender and moist.
- Remove to a plate.
- Add onions and more oil if needed to hot skillet.
- Sauté until translucent.
- Add garlic and continue sautéing until garlic is fragrant.
- Add beef and stir in tomatoes and thyme.
- Stir until heated through.
- Stir in stock.
- Bring to simmer.
- Simmer covered 10-15 minutes.
- Add okra and simmer another 20-30 minutes.
- Serve over rice.
