Beef And Okra Jamaican Stir Fry Recipe
BEEF AND OKRA JAMAICAN STIR FRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roberts Estate in Sherman, Texas in 1994.

Ingredients
  • 2 pound beef shoulder sliced thin across grain
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons vegetable oil
  • 1 white onion thinly sliced
  • 2 clove garlic minced
  • 2 tomatoes chopped
  • 1 teaspoon thyme
  • 1 cup beef stock
  • 1 pound okra chopped

Directions
  1. Mix beef, salt and pepper.
  2. Let set briefly about 10 minutes to season.
  3. Heat oil on high heat in a skillet and stir-fry beef until browned yet still tender and moist.
  4. Remove to a plate.
  5. Add onions and more oil if needed to hot skillet.
  6. Sauté until translucent.
  7. Add garlic and continue sautéing until garlic is fragrant.
  8. Add beef and stir in tomatoes and thyme.
  9. Stir until heated through.
  10. Stir in stock.
  11. Bring to simmer.
  12. Simmer covered 10-15 minutes.
  13. Add okra and simmer another 20-30 minutes.
  14. Serve over rice.
