- 2 cups all-purpose flour shopping list
- 1/2 cup cocoa powder shopping list
- 1 1/4 teaspoons baking soda shopping list
- 1 teaspoon salt shopping list
- 1 cup buttermilk (if you don't have buttermilk, use 1 cup milk + 1 tsp vinegar, stir, allow to sit for about 5 minutes, then stir again, and use as you would the buttermilk) shopping list
- 1 tsp vanilla shopping list
- 1 stick unsalted butter, softened shopping list
- 1 cup brown sugar shopping list
- 1 egg shopping list
- Filling: shopping list
- 1 stick butter softened shopping list
- 1 (7 oz) jar of marshmallow cream shopping list
- 1 cup confectioners sugar shopping list
- 1 tsp vanilla shopping list
How to make it
- Preheat oven to 350 degrees F.
- Mix flour, cocoa, salt, and baking soda in a large bowl till the cocoa powder is evenly distributed.
- In a cup or bowl, add the vanilla to the buttermilk.
- In a separate bowl, mix brown sugar and butter till it is fluffy and light.
- Add egg to sugar mixture.
- Then add 1/4 of the flour mixture and mix till combined.
- Add 1/3 of the buttermilk, mix till combined.
- Add another 1/4 of the flour mixture, and so forth till the last of the buttermilk and the flour mix is all incorporated.
- Using a small spoon (I used a 1/8 c measuring scoop), scoop the mix onto two baking sheets lined with parchment paper. You should end up with 24 scoops.
- Bake for 13 minutes. Switch out baking pans once during baking so that the cakes bake evenly.
- Allow to cool (off the pan) for at least 15 minutes.
- Make the filling:
- Using a mixer, all the filling ingredients until well incorporated.
- Make the cakes:
- Flip 12 of the cakes over so that you can spoon the filling onto the flat side of the cake.
- Top with another cake.
