How to make it

  • Preheat oven to 350 degrees F.
  • Mix flour, cocoa, salt, and baking soda in a large bowl till the cocoa powder is evenly distributed.
  • In a cup or bowl, add the vanilla to the buttermilk.
  • In a separate bowl, mix brown sugar and butter till it is fluffy and light.
  • Add egg to sugar mixture.
  • Then add 1/4 of the flour mixture and mix till combined.
  • Add 1/3 of the buttermilk, mix till combined.
  • Add another 1/4 of the flour mixture, and so forth till the last of the buttermilk and the flour mix is all incorporated.
  • Using a small spoon (I used a 1/8 c measuring scoop), scoop the mix onto two baking sheets lined with parchment paper. You should end up with 24 scoops.
  • Bake for 13 minutes. Switch out baking pans once during baking so that the cakes bake evenly.
  • Allow to cool (off the pan) for at least 15 minutes.
  • Make the filling:
  • Using a mixer, all the filling ingredients until well incorporated.
  • Make the cakes:
  • Flip 12 of the cakes over so that you can spoon the filling onto the flat side of the cake.
  • Top with another cake.
