How to make it

  • Steam cauliflower until tender. Drain.
  • In a food processor, add cauliflower, ghee/clarified butter, almond meal/flour and salt.
  • Blend until smooth.
  • Serve warm.

    I made this with Spiced Ghee from Recipes for the Specific Carbohydrate Diet, and since my food processor is small, I only ran the cauliflower through it, not the final mix. Result: quirky, but tasty. Good enough for me to make it again, but I'd never try to trick a non-SCDer!
