I almost tricked my husband with these tonite - they were that good. If you're wanting to have more vegetables, less starch - go for these. This recipe is from "Cooking to Heal Little Tummies" and is SCD legit.

Ingredients
  • 1 pkg. frozen cauliflower (or 2/3 head of fresh)
  • 1/4 cup ghee/clarified butter
  • 1/2 cup almond meal/flour
  • 1 tsp salt

Directions
  1. Steam cauliflower until tender. Drain.
  2. In a food processor, add cauliflower, ghee/clarified butter, almond meal/flour and salt.
  3. Blend until smooth.
  4. Serve warm.

I made this with Spiced Ghee from Recipes for the Specific Carbohydrate Diet, and since my food processor is small, I only ran the cauliflower through it, not the final mix. Result: quirky, but tasty. Good enough for me to make it again, but I'd never try to trick a non-SCDer!
