Matjes Against Hangover Recipe
this dish is a healthy, refreshing, tasty dish on 'the day after' - but you don't need to have a hangover to like it.traditionally served in Germany on ash wednesday but i love to eat it in late spring (may and june) when matjes are at their best.

Ingredients
  • 8 matjes halves
  • 2 apples
  • 2 onions
  • 4 large pickled cucumbers
  • 4 cups sour cream
  • 1 cup (approx. light cream)
  • approx. 1 TBSP. white vinegar
  • approx. 1 TBSP. mazola oil or similar
  • freshly ground pepper to taste

Directions
  1. stir together sour cream, light cream, vinegar, oil, pepper
  2. slice matjes halves crosswise,
  3. about 2 centimeters (so you get it on fork and into mouth without having to use knife to cut smaller :-) )
  4. add to creammixture,
  5. peel, core, quarter and slice apples (making small triangula pieces)
  6. add to cream-mixture
  7. peel onions, cut in halves, cut crosswise for thin slices
  8. add to cream mixture
  9. cut pickled cucumbers in halves, cut crosswise making thin slices
  10. add to cream mixture.
  11. stir all well,
  12. refrigerate for one to two hours.
  13. serve with boiled potatoes in their jackets - but you may peel the, before serving :-)
