How to make it

  • Mix together crushed cookies, lemon rind and melted butter.
  • Firmly press on bottom of a spring form pan.
  • Peel grapefruit and oranges then cut segments into small pieces.
  • Separate 2 eggs and combine yolks, whole egg, sugar, salt and juice in top of double boiler.
  • Place over simmering water and cook stirring constantly until mixture thickens.
  • Remove from heat.
  • Soak gelatin in water for 5 minutes then stir into warm custard until dissolved.
  • Press cream cheese through strainer and beat with remaining juices and rinds until smooth.
  • Beat into custard then fold in grapefruit and orange pieces.
  • Lightly whip cream and beat egg whites until they form soft peaks.
  • Fold cream and egg whites into cheese mixture then pour into prepared pan and chill overnight.
