Carrot Soup Recipe
The secret to this carrot soup is in getting fresh baby carrots in the early fall as well as the raw cream. Raw cream may be difficult to find in some areas.

Ingredients
  • 2 medium sized onions, sliced
  • 2 Tbsp butter
  • 1 lb baby carrots
  • 1 or 2 c milk
  • salt, pepper, nutmeg
  • raw cream

Directions
  1. Saute the onions in the butter until clear
  2. Steam the carrots until tender
  3. In a blender puree the carrots and onions together in the water used to steam the carrots (should be about 1/2 c of water). This puree will be thick.
  4. Thin the puree to the desired consistency with the milk.
  5. Season to taste with salt, pepper and nutmeg.
  6. Just before serving, dot with the raw cream.
