Carrot Soup

- 2 medium sized onions, sliced shopping list
- 2 Tbsp butter shopping list
- 1 lb baby carrots shopping list
- 1 or 2 c milk shopping list
- salt, pepper, nutmeg shopping list
- raw cream shopping list
How to make it
- Saute the onions in the butter until clear
- Steam the carrots until tender
- In a blender puree the carrots and onions together in the water used to steam the carrots (should be about 1/2 c of water). This puree will be thick.
- Thin the puree to the desired consistency with the milk.
- Season to taste with salt, pepper and nutmeg.
- Just before serving, dot with the raw cream.
