How to make it

  • Saute the onions in the butter until clear
  • Steam the carrots until tender
  • In a blender puree the carrots and onions together in the water used to steam the carrots (should be about 1/2 c of water). This puree will be thick.
  • Thin the puree to the desired consistency with the milk.
  • Season to taste with salt, pepper and nutmeg.
  • Just before serving, dot with the raw cream.
