Veal Stock Recipe
A nice veal stock for use in other recipes.

Ingredients
  • 4 pounds veal bones
  • 2 1/2 pounds beef bones
  • 4 large diced onion
  • 1 bunch large sliced celery
  • 2 cups tomato paste
  • 2 large diced carrots
  • 2 cup red wine

Directions
  1. Heat oven to 350 degrees.
  2. Roast the bones in oven at least 2 hours until well browned.
  3. Put the bones into a large pan and add vegetables and tomato paste and roast until browned.
  4. Deglaze with red wine.
  5. Cover with water and bring to a simmer.
  6. Allow to simmer 6 to 8 hours, skimming occasionally.
