How to make it

  • Combine strawberries, sugar and water and simmer until berries are soft.
  • Stir in cornstarch and heat, stirring until thickened.
  • Put in a blender and puree.
  • Add wine, lemon juice, and lemon peel and pulse blend until combined.
  • Chill thoroughly and season to taste with cognac.
  • Garnish with lemon peel.
