Cold Strawberry Soup

- 2 c fresh strawberries, sliced shopping list
- 6 Tbsp sugar shopping list
- 1 c water shopping list
- 2 tsp cornstarch mixed in 1 Tbsp cold water shopping list
- 1 c dry white wine shopping list
- 2 Tbsp lemon juice shopping list
- 2 tsp lemon peel shopping list
- cognac shopping list
How to make it
- Combine strawberries, sugar and water and simmer until berries are soft.
- Stir in cornstarch and heat, stirring until thickened.
- Put in a blender and puree.
- Add wine, lemon juice, and lemon peel and pulse blend until combined.
- Chill thoroughly and season to taste with cognac.
- Garnish with lemon peel.
