What can be better than an orange-chocolate cheesecake? How about a few splashes of liqueur, the elimination of refined sugar and lower-fat, lower-cholesterol ingredients?

Ingredients
  • 1 ½ cup chocolate wafer crumbs ***
  • 2 tbsp orange juice
  • 1 tbsp Kahlua
  • 8 oz silken lite firm tofu
  • ½ cup part-skim, smooth ricotta cheese
  • 2 tbsp light cream cheese
  • 1/3 cup maple or rice syrup
  • 2 egg whites
  • 1 egg
  • 2 tbsp Kahlua
  • 1 tbsp Grand Marnier
  • ¼ cup cocoa powder
  • *** for a GF cake, use GF cookie crumbs

Directions
  1. Preheat oven to 350°F.
  2. Mix the wafer crumbs with the orange juice and coffee liqueur until combined. Press into a 9-inch spring form pan.
  3. Bake 10 minutes, allow to cool thoroughly.
  4. Combine tofu, ricotta, cream cheese, maple syrup, egg white, egg, Kahlua, Grand Marnier and cocoa powder in a food processor until smooth.
  5. Spread evenly over the crust and bake for 1 hour or until set.
  6. Chill overnight before serving.
