Chocolate Pineapple Cheesecake Recipe
This delicious dessert takes about 15 minutes to prepare, freezes well, and is always a crowd pleaser! I use a spring pan but any pie plate or cake pan will do.

Ingredients
  • One 250g package pineapple-flavoured cream cheese;
  • one 200g package thin chocolate wafers;
  • one 1L tub Cool Whip;
  • one c icing sugar;
  • one 398mL can crushed pineapple, drained;
  • 1/4 c margarine.

Directions
  1. Place chocolate wafers upright around edge of the pie dish or spring pan.
  2. Crush the remaining wafers and set aside 1/4 c of for the topping. Melt margarine and mix with crushed wafers.
  3. Press wafer/margarine mix into bottom of the pan to form crust. Blend together the cream cheese and the icing sugar.
  4. Add the drained crushed pineapple and 3/4 of the tub of Cool Whip. Spread the mixture over the crumb base.
  5. Top with remaining cool whip and sprinkle with the reserved wafer crumbs.
  6. Refrigerate for at least one hour before serving.
  7. Serves 6.
  8. This recipe also freezes well..
