Chocolate Pineapple Cheesecake

- One 250g package pineapple-flavoured cream cheese; shopping list
- one 200g package thin chocolate wafers; shopping list
- one 1L tub Cool Whip; shopping list
- one c icing sugar; shopping list
- one 398mL can crushed pineapple, drained; shopping list
- 1/4 c margarine. shopping list
How to make it
- Place chocolate wafers upright around edge of the pie dish or spring pan.
- Crush the remaining wafers and set aside 1/4 c of for the topping. Melt margarine and mix with crushed wafers.
- Press wafer/margarine mix into bottom of the pan to form crust. Blend together the cream cheese and the icing sugar.
- Add the drained crushed pineapple and 3/4 of the tub of Cool Whip. Spread the mixture over the crumb base.
- Top with remaining cool whip and sprinkle with the reserved wafer crumbs.
- Refrigerate for at least one hour before serving.
- Serves 6.
- This recipe also freezes well..
