My take on a restaurant favorite.

Ingredients
  • 1.5 lbs lean ground beef
  • 1 pkg. frozen potato coins
  • 1 15oz can refried beans
  • 1T. Chili powder
  • I packet taco seasoning
  • Shredded lettuce
  • Chopped tomato
  • Shredded cheese
  • sliced black olives
  • Salsa
  • sour cream

Directions
  1. Cook potato coins as directed, when done season with chili powder
  2. Cook ground beef until crumbled and no longer pink, drain return to pan
  3. Add taco seasoning and specified amount of water usually 3/4 C
  4. Bring to boil- boil until thickened
  5. Heat refried beans.
  6. In individual bowls, assemble as follows: potato coins, beans, beef, cheese, lettuce, tomato, olives, salsa and sour cream.
