Lime Parfait Pie

LIME PARFAIT PIE This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Parnell Estate in McKinney, Texas in 1984.
Ingredients
- 6 ounces lime gelatin shopping list
- 2 cups boiling water shopping list
- 1 teaspoon shredded lime peel shopping list
- 1/3 cup lime juice shopping list
- 1 quart vanilla ice cream softened shopping list
- 1 baked pastry shell cooled shopping list
How to make it
- Dissolve gelatin in boiling water until all crystals disappear.
- Stir in peel and lime juice.
- Add softened ice cream by spoonfuls stirring until melted.
- Chill in bowl until mixture mounds slightly when spooned.
- Pour into cooled pastry shell.
- Chill until firm then top with whipped cream.
