Sauteed Brains On Toast Recipe
This is best with beef or veal brains.

Ingredients
  • 1 lb veal or beef brains
  • 4 c water
  • 1/2 Tbsp salt
  • 1 Tbsp lemon juice
  • flour
  • 1 egg
  • 1 c milk
  • fresh breadcrumbs
  • 1/2 c butter

Directions
  1. Soak brains in cold water for 30 minutes, drain.
  2. bring the water, salt and juice to a simmer, and add the brains.
  3. Simmer and cook for 10 minutes. Do NOT boil or overcook, this will destroy the structure of the brains.
  4. emove the brains and immediately plungeinto icewater to stop cooking.
  5. When cool enough to handle, remove from the ice bath and pat dry.
  6. Remove membrane.
  7. Slice into 1" thick slices.
  8. beat egg into milk and add salt & pepper.
  9. Roll the brains gently in flour, dip into the egg wash, and roll in breadcrumbs.
  10. Saute the brains in the butter, turning carefully, until golden on both sides.
  11. Serve immediately on hot toast with lemon wedges and sprinkled with parsley
