Ingredients

1 large carrot

1 cup plain yogurt

2/3 cup canned tomatoes drained

1 tablespoon sugar

1 teaspoon lemon zest

Ice cubes optional

Directions

Cook carrot until tender.

Puree cooked carrot in a food processor or blender and process until pureed.

Add yogurt, tomatoes, sugar and lemon zest.

Process 1 minute.
