Luscious Potato Crepes

- 1 cup light cream cheese shopping list
- 1 tablespoon all-purpose flour shopping list
- 2 eggs, beaten shopping list
- 1 cup sharp or extra sharp cheddar cheese, finely shredded shopping list
- 4 potatoes, peeled and finely shredded shopping list
- ground black pepper to taste shopping list
- 1 tablespoon fresh parsley, chopped shopping list
- 1/4 to 1/2 cup milk shopping list
- 1 tablespoon vegetable oil or butter or margarine shopping list
How to make it
- Squeeze excess moisture from shredded potatoes. Set aside.
- Beat together cream cheese and flour.
- Beat in eggs, cheese, potatoes, pepper and parsley.
- Finely minced chives or green onion can be added as well, depending on your filling of choice.
- Add enough milk to make a thick batter.
- Heat oil, butter or margarine in small skillet.
- Pour in 1 tablespoon batter. Move pan around to spead batter over bottom of skillet.
- Brown crepes on both sides.
- To keep crepes warm, stack on a plate, cover with foil and set plate over a pan of simmering water.
- Serve crepes with filling of choice. Some possibilities are:
- -Sauteed mushrooms and onions
- -1/4 cup cooked ham or chicken combined with 1/4 cup sour cream
- -1 green apple, diced and mixted with 1/4 cup blue cheese and 1 1/2 teaspoons chopped walnuts
- -1 cup cooked spinach with one clove garlic sauteed in 1/2 tablespoon oil.
