How to make it

  • Squeeze excess moisture from shredded potatoes. Set aside.
  • Beat together cream cheese and flour.
  • Beat in eggs, cheese, potatoes, pepper and parsley.
  • Finely minced chives or green onion can be added as well, depending on your filling of choice.
  • Add enough milk to make a thick batter.
  • Heat oil, butter or margarine in small skillet.
  • Pour in 1 tablespoon batter. Move pan around to spead batter over bottom of skillet.
  • Brown crepes on both sides.
  • To keep crepes warm, stack on a plate, cover with foil and set plate over a pan of simmering water.
  • Serve crepes with filling of choice. Some possibilities are:
  • -Sauteed mushrooms and onions
  • -1/4 cup cooked ham or chicken combined with 1/4 cup sour cream
  • -1 green apple, diced and mixted with 1/4 cup blue cheese and 1 1/2 teaspoons chopped walnuts
  • -1 cup cooked spinach with one clove garlic sauteed in 1/2 tablespoon oil.
