I found this in the back of my Mom's recipe file. She had cut it from the newspaper at some time. Use a filling of choice.

Ingredients
  • 1 cup light cream cheese
  • 1 tablespoon all-purpose flour
  • 2 eggs, beaten
  • 1 cup sharp or extra sharp cheddar cheese, finely shredded
  • 4 potatoes, peeled and finely shredded
  • ground black pepper to taste
  • 1 tablespoon fresh parsley, chopped
  • 1/4 to 1/2 cup milk
  • 1 tablespoon vegetable oil or butter or margarine

Directions
  1. Squeeze excess moisture from shredded potatoes. Set aside.
  2. Beat together cream cheese and flour.
  3. Beat in eggs, cheese, potatoes, pepper and parsley.
  4. Finely minced chives or green onion can be added as well, depending on your filling of choice.
  5. Add enough milk to make a thick batter.
  6. Heat oil, butter or margarine in small skillet.
  7. Pour in 1 tablespoon batter. Move pan around to spead batter over bottom of skillet.
  8. Brown crepes on both sides.
  9. To keep crepes warm, stack on a plate, cover with foil and set plate over a pan of simmering water.
  10. Serve crepes with filling of choice. Some possibilities are:
  11. -Sauteed mushrooms and onions
  12. -1/4 cup cooked ham or chicken combined with 1/4 cup sour cream
  13. -1 green apple, diced and mixted with 1/4 cup blue cheese and 1 1/2 teaspoons chopped walnuts
  14. -1 cup cooked spinach with one clove garlic sauteed in 1/2 tablespoon oil.
