VIRGINIA HAM Recipe
A great favourite with my Grandson, recipe passed on to him on request

Ingredients
  • 5 lb. - 6lb piece of Gammon Ham
  • 2 Pints Cider
  • GLAZE: 1 Teaspoon of dr Mustard Powder and about 2 oz. odf Demera sugar and Little Stock.

Directions
  1. Use a Large Pan.
  2. Place the Ham in a Cooking Bag
  3. Pour Cider into the bag lightlyy tying off so the cider does not escape.
  4. Place this into a Large pan into which pour Boiling water.
  5. Bring pan to a rolling boil, then Turn Down and cook gently for 1 1/2 hours.
  6. Take from heat then wrap pan in a Blanket (hay box method) and leave to cook in it`s own heat for 6 hours. - overnight if wished.
  7. Take skin off ham whilst hot It should peel off easily
  8. TO GLAZE:
  9. Wrap Ham in Tin Foil leaving pnly the Fat area exposed (one side) Mix mustard (fairly thick) and then mix in the Brown Sugar. Spread this over the Fat side of the ham and brown in a Hot oven at Gas marked 7 (425 degrees F) for about 10 minutes, but keep your eye on it.
  10. Serve either Hot or cold. Hot with several different vegetables, Roasted Potatoes, Sweet Potatoes, Parsnips - baked . Carrots or Peas. Top with sliced Pineapple.
  11. Or if cold, serve with a good mixed Salad.
  12. Cooked by this method, the Ham becomes very Tender and is delicious. Any left-ovwers can be used for Sanwiches next day- that is if there are any left overs!!
