Enchiladas

- FOR RED SAUCE: shopping list
- 2 TBS flour shopping list
- 2 TBS olive oil shopping list
- 4 TBS chili powder shopping list
- 3 dashes tabasco shopping list
- crushed garlic shopping list
- 1 tsp salt shopping list
- 1/4 tsp cumming shopping list
- chopped onion shopping list
- 2 cups water shopping list
- FOR beef MIXTURE: shopping list
- 2 pounds ground beef shopping list
- chopped onion shopping list
- 2 cans green chilies shopping list
- garlic shopping list
- 2 pints tomato sauce shopping list
- 1/2 tsp salt shopping list
- 2 cups cheddar cheese shopping list
- corn tortillas shopping list
How to make it
- RED SAUCE:
- heat oil, garlic, and onions in sauce pan over med heat till onions are transulant
- add flour,chili powder,tabasco, salt, and cumming at once, stirring constintantly
- wisk in water and bring to slow boil
- simmer on low for 3 min.
- BEEF MIXTURE:
- brown ground beef, onions and garlic. add salt.
- drain meat mixture
- add chilies, and tomato sauce
- simmer for 10 min
- place 2 more TBS olive oil into frying pan and heat
- fry tortillas for 10 seconds or so on each side
- place on papertowels to drain
- in casserole dish fill each tortilla with spoonful of meat mixture and roll placing seams on bottom
- cover with red sauce
- top with cheese
- cover with foil and bake for 30 min at 350
