Pueblo Posole Stew Recipe
My version of the traditional mexican pork stew/soup. The fresh cilantro makes ALL the difference. Serve with warm crusty bread to soak up the sauce.

Ingredients
  • 2 lbs. pork shoulder or pork ribs, cut into bite size pieces
  • 2- 29 oz. cans of Hominy*
  • 2 cans chopped green chilis
  • 2-3 garlic cloves, minced
  • 2 large onions, chopped
  • 1/2 tsp. mexican chili powder or 1/2 tsp cayenne pepper
  • 2 tbsp. fresh chopped cilantro
  • juice of one lime
  • 1-2 bottles of good quality beer
  • 1 14 oz. can chopped tomatoes
  • 1 can tomato paste (small)

Directions
  1. Place one can of undrained hominy and one can of drained hominy in a large soup pot or dutch oven.
  2. Add remaining ingredients and stir.
  3. Add additional liquid if necessary to cover ingredients (beer, stock, water).
  4. Simmer on low for approx 90 minutes until pork is cooked through and tender.
  5. Serve with warm flour tortillas.
  6. *Hominy is usually found in the mexican food section of the grocery store. It is corn that is processed with salt and lime.
