Okinawan Sweet And Sour Pork Recipe

Ingredients
  • 1 pound pork cut into 1 inch cubes
  • MARINADE:
  • 3 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp ginger
  • BATTER:
  • 2 beaten eggs
  • 6 tbsp cornstarch
  • SAUCE:
  • 2/3 cup sugar
  • 1 tbsp soy sauce
  • 1/2 cup vinegar
  • 1 tsp salt
  • 1/2 cup pineapple juice
  • 4 tbsp ketchup
  • 1/2 cup water
  • 3 tbsp cornstarch
  • VEGETABLES:
  • carrots
  • peppers
  • onion
  • 1 can pineapple chunks (DRAIN AND RESERVE JUICE NOT SYRUP)

Directions
  1. Mix marinade, pour over pork. Soak 2-3 hours.
  2. Make sauce, bring ingredients to a boil. Add cornstarch mixed in the water. Stir until thick.
  3. Drain meat. Dip in egg and cornstarch. Fry. Drain and keep warm.
  4. Stir fry vegetables. Drain, and add to sauce. Add pineapple and meat.
  5. Serve over rice.
  6. I make extra sauce so I can have extra sweet and sour sauce.
