How to make it

  • Sear legs and thighs in a heavy pan unitl skin starts to color.
  • Stir in garlic and bay leaves, then add soy and vinegar until chicken pieces are about 1/2 covered.
  • Bring to a boil, reduce heat to a simmer, cover and slowly cook until meat becomes tender. (about 45-60 minutes)
  • Remove cover, increase heat to med high and let sauce reduce by half.
  • Serve over steamed rice with a good helping of souce poured over it.
