Pineapple Casserole Recipe
PINEAPPLE CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brimley Estate in McKinney, Texas in 1987.

Ingredients
  • 1 pound can crushed pineapple
  • 3/4 cup granulated sugar
  • 2 eggs
  • 3 tablespoons flour
  • 7 slices white bread cut into 1" cubes
  • 4 tablespoons butter

Directions
  1. Preheat oven to 450.
  2. Put butter in medium casserole dish and put in oven until butter melts.
  3. Add bread cubes and toss lightly.
  4. Place in the oven and heat until lightly browned.
  5. Turn oven down to 350.
  6. Mix sugar, eggs and flour in a bowl.
  7. Add pineapple and blend well.
  8. Remove bread from casserole dish and set aside.
  9. Pour pineapple mixture into casserole dish.
  10. Spoon bread cubes on top being careful not to push bread into the mix.
  11. Bake uncovered for 45 minutes.
