Ingredients

1 loaf of crusty rustic Italian bread

6 ripe Italian plum tomatoes

2 garlic cloves, minced

2 tablespoons capers

fresh basil leaves - as many as you like, rough chopped

extra virgin olive oil

salt and freshly ground pepper

Directions

Slice and toast the bread; when toasted, cut into cubes;

Seed and chop the tomatoes;

Mince the garlic and tear the basil leaves;

Place the bread in a salad bowl; add the chopped tomatoes, garlic, capers, and basil;

Drizzle with olive oil; salt and pepper to taste;

Toss and serve.

I LOVE 'Panzanella' (as I know it) and can't wait until tomatoes are back in season!! (Check out my Panzanella recipe, or my Tuscan Bread Soup recipe, which is along the same idea but rather a soup....) Pappa al Pomodoro is another soup (Tomato Bread Soup) that you might enjoy!
