How to make it

  • Slice and toast the bread; when toasted, cut into cubes;
  • Seed and chop the tomatoes;
  • Mince the garlic and tear the basil leaves;
  • Place the bread in a salad bowl; add the chopped tomatoes, garlic, capers, and basil;
  • Drizzle with olive oil; salt and pepper to taste;
  • Toss and serve.

    I LOVE 'Panzanella' (as I know it) and can't wait until tomatoes are back in season!! (Check out my Panzanella recipe, or my Tuscan Bread Soup recipe, which is along the same idea but rather a soup....) Pappa al Pomodoro is another soup (Tomato Bread Soup) that you might enjoy!
