A lazy day today! This was an quick and easy way to use up leftover roast beef from the day before! It gave me 6 generous helpings. I served it with fresh brown bread with herbs.

Ingredients
  • 6 thick slices beef, cubed
  • bag of freshly frozen stew mix
  • 15-20 button mushrooms
  • tin of chopped tomatoes
  • packet of beef casserole mix
  • garlic puree
  • 1 tablespoon olive oil
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • salt and freshly milled black pepper to raste

Directions
  1. Sweat the veg in the oil
  2. add garlic , tomatoes and casserole mix
  3. reduce heat to low
  4. add beef and mushrooms and simmer for half an hour
  5. taste for seasoning, add salt and pepper if required
