Ingredients
  • 6-8 YUKON GOLD POTATOES
  • 1 14 OZ CAN DICED TOMATOES
  • 2 LARGE ONIONS
  • 2 CLOVES GARLIC
  • SALT AND PEPPER TO TASTE
  • OLIVE OIL FOR SAUTE
  • 1/2 STICK BUTTER

Directions
  1. PEEL AND CUT POTATOES INTO WEDGES
  2. TAKE A LARGE SAUTE PAN AND ADD ONIONS AND GARLIC IN
  3. THE OLIVE OIL AND BUTTER
  4. AFTER A FEW MINUTES ADD THE TOMATOES, SAUTE ALL FOR A FEW MOMENTS TIL THICKENED SLIGHTLY
  5. ADD THE POTATOES TO THE PAN AND KEEP MOVING ALL FOR A PERIOD OF ABOUT 5 MINUTES
  6. INVERT INTO A NICE SIZED CASSEROLE DISH AND PLACE IN A PREHEATED350 DEGREE OVEN
  7. COVER WITH FOIL
  8. LAST 20 MINUTES REMOVE THE FOIL FOR A MORE INTENSE FLAVOUR
  9. REMOVE, LET REST OR 'LET IT GO TO IT'S MOTHER'
  10. ENJOY

1. so what is the actual period of cooking before the "last 20 minutes"?
2. Northern Greek potatoes from Yukon?
3. I would suggest (if I may) that you omit the foil covering since potatoes are getting very soft this way which is not necessarily good. If you wish you can boil the potatoes for 10 minutes before cooking and then add them to the pan.


I would suggest you try this recipe first before you add comments on how to 'fix it'
bake for around 45 minutes
boiling the potatoes will take all nutrients away and turn into mash potatoes


I love potato & tomato mixtures, especially with onions & garlic for flavouring. I often 'layer' these ingredients in a foil pan, cover tightly with foil, and place on the BBQ while cooking the meat...I look forward to baking it in the oven sometime soon, especially since the BBQ is about 2 feet under snow right now!! :)

Yes, actually I have and they are delicious either way..this in an old recipe from my mother and grandmother who happen to be Greek.
