Spinach Pie Recipe
This is a Passover lunch or it may be made as a seder side dish. We use it both ways.. if there's any leftover from dinner. It's essentially a Passover quiche.

Ingredients
  • 6 Tbsp olive oil
  • 2 packages thawed, and drained frozen spinach
  • 12 scallions, chopped - use some of the green tops - this should net 2 cups
  • 1 cup matzoh meal
  • 8 large eggs
  • 1/4 cup lemon juice
  • Salt and Pepper
  • 2 whole matzohs

Directions
  1. Preheat oven to 350
  2. Use 1 Tbsp of the oil to grease a shallow 2 quart baking dish
  3. In a skillet heat the remaining oil and stir in the scallions.
  4. Cook those until they start to become transparent and then add the spinach.
  5. Once that is mixed in well add the matzoh meal and combine well. It will feel kind of heavy at this point.
  6. Whisk the eggs with the lemon juice well and then add that to the spinach mix.
  7. Season with the salt and pepper fairly generously.
  8. Break up the matzoh and arrange the pieces on the bottom of the oiled dish.
  9. Pour the spinach mixture over this.
  10. Bake for 1/2 hour to 45 minutes - judge by eye when the top is browned for it to be ready.

Yummmmm, this is similar to a spinach loaf that I make.
