Spinach Pie

- 6 Tbsp olive oil shopping list
- 2 packages thawed, and drained frozen spinach shopping list
- 12 scallions, chopped - use some of the green tops - this should net 2 cups shopping list
- 1 cup matzoh meal shopping list
- 8 large eggs shopping list
- 1/4 cup lemon juice shopping list
- Salt and pepper shopping list
- 2 whole matzohs shopping list
How to make it
- Preheat oven to 350
- Use 1 Tbsp of the oil to grease a shallow 2 quart baking dish
- In a skillet heat the remaining oil and stir in the scallions.
- Cook those until they start to become transparent and then add the spinach.
- Once that is mixed in well add the matzoh meal and combine well. It will feel kind of heavy at this point.
- Whisk the eggs with the lemon juice well and then add that to the spinach mix.
- Season with the salt and pepper fairly generously.
- Break up the matzoh and arrange the pieces on the bottom of the oiled dish.
- Pour the spinach mixture over this.
- Bake for 1/2 hour to 45 minutes - judge by eye when the top is browned for it to be ready.
