Peas With Shallots And Pancetta

- 2 Tbsp olive oil shopping list
- 8 oz pancetta (can use bacon), small dice shopping list
- 3 shallots, halved and thinly sliced shopping list
- 1 clove garlic, minced shopping list
- red pepper flakes to taste shopping list
- 1 lb frozen peas (I like the tiny ones) shopping list
- chicken broth shopping list
- salt and pepper shopping list
How to make it
- Cook pancetta in olice oil
- Drain all but 1 tbsp oil. Reserve pancetta
- Cook shallot in the the pancetta/oilve oil.
- Add salt and pepper to taste
- When shallots are soft, add garlic and pepper flakes
- Saute about 1 minute
- Add peas and a little chicken broth
- Cover and cook until peas are tender
- Drain off chicken broth
- Top with pancetta and serve
