How to make it

  • Cook pancetta in olice oil
  • Drain all but 1 tbsp oil. Reserve pancetta
  • Cook shallot in the the pancetta/oilve oil.
  • Add salt and pepper to taste
  • When shallots are soft, add garlic and pepper flakes
  • Saute about 1 minute
  • Add peas and a little chicken broth
  • Cover and cook until peas are tender
  • Drain off chicken broth
  • Top with pancetta and serve
