Turkey Noodle Soup Recipe

Ingredients
  • 3/4 C. Frozen Peas
  • 1 C. Frozen Corn or 1 Can Corn
  • 1C. Carrots
  • 3/4 C. Diced Onion
  • 1 Tbsp. Salt
  • 3/4 tsp. Pepper
  • 1/2 tsp. Dried Marjoram
  • 1/2 tsp. Dried Thyme
  • 1/2 tsp. Dried Basil
  • 1/2 tsp. Dried Parsley
  • 1 C. Uncooked Rice OR
  • 2 C. Uncooked Egg Noodles
  • As much left over turkey as possible

Directions
  1. Remove as meat from left over turkey as possible and set a side.
  2. Place turkey bones (with some meat, and andy left over giblets, etc.) in water in a large kettle.
  3. Bring to a boil.
  4. Reduce heat;cover and simmer for 1-2 hours.
  5. Strain, reserving the broth and throwing out the rest.
  6. To the broth, add the spices, (bouillon if desired), carrots, celery and onion; simmer for 30 minutes.
  7. Add Peas, Corn, Rice or Noodles and reserved Turkey Meat; Simmer uncovered until Rice or Noodles are tender. (Do Not Over Cook The Noodles or Rice)
  8. *May adjust Spices to taste.

I do something like this.. I was taught.. want not ... waste not! Breaks my heart to see people throw that turkey carcass out! I like it with rice!
