General Taos Tofu Recipe
Heres a great one for all you vegans out there! I love this. Even meat and potato hubby said he "tolerated it(LOL) :)) .

Ingredients
  • 1 box firm tofu.(I like Silken)
  • egg substitute
  • 3/4 cup cornstarch
  • vegetable oil for frying
  • 3 chopped green onions
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 2/3 cup vegetable stock(see reipce, you can also used 1 cube)
  • 2 tablespoons soy sauce
  • 4 tablespoons sugar
  • red pepper to taste
  • 1 tablespoon white vinegar
  • Steamed broccoli or rice or both!

Directions
  1. Drain, dry and cut tofu into 1 inch chunks.
  2. You can freeze tofu the night before to get a more chicken-like consistency, but it is not a must.
  3. Mix the egg replacer(or real egg if not vegan) as the box says and then add 3 extra tablespoons of water.
  4. dip tofu in egg/water mixture completely to coat.
  5. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Make sure the cornstarch doesn't clump at the bottom of the bowl.
  6. Heat oil in a pan and fry tofu pieces until golden. Drain oil.
  7. Heat 3 tablespoons vegetable oil in pan on medium heat.
  8. Add green onions, ginger and garlic, cook for about 2 minutes Be careful not to burn garlic
  9. Add vegetable stock, soy sauce, sugar, red pepper and vinegar.
  10. Mix 2 tablespoons of water with 1 tablespoon of cornstarch (this is called a slurry.)
  11. Add this to mixture and stir well.
  12. Add fried tofu and coat evenly.
  13. Serve with steamed brocolli and rice,
