Vegetarian White Bean Chili

- 2 Tbls.butter shopping list
- 2 cups chopped mixed bell pppers,red,green,yellow,orange shopping list
- 1 cup chopped onions shopping list
- 2 tsp.minced garlic shopping list
- 2 14 oz,cans vegetable broth shopping list
- 1,15 oz,canbutter beans,rinsed & drained shopping list
- 1,15 oz can,black-eyed peas,rinsed & drained shopping list
- 1,15 0z can,garbano beans,rinsed & drained shopping list
- 1,15 oz can,navy beans,rinsed & drained shopping list
- 1,4 oz can,chopped green chilis shopping list
- 1 jalapeno,chopped shopping list
- 1 tbls.chili powder shopping list
- 2 tsp.ground cumin shopping list
- 1 tsp.dried oregano shopping list
- 1 tsp.paprika shopping list
- 1/8-1/4 tsp.ground red pepper shopping list
- 1 cup sour cream shopping list
How to make it
- Melt butter in a 5 Qt saucepan;add peppers,onions,garlic.Cook over medium heat,stirring occasionally,until softened (5-7 min.)
- Add all remaining ingredients,except sour cream.Continue cooking until mixture comes to full boil.(10-12 min.)
- Cover,reduce heat to low.Cook;stirring occasionally,until slightly thickened (45-50 minutes).Remove from heat.Stir in sour cream.Serve::if desired garnish with shredded monteray jack cheese and chopped fresh cilantro.
