Ingredients
  • 2 Tbls.butter
  • 2 cups chopped mixed bell pppers,red,green,yellow,orange
  • 1 cup chopped onions
  • 2 tsp.minced garlic
  • 2 14 oz,cans vegetable broth
  • 1,15 oz,canbutter beans,rinsed & drained
  • 1,15 oz can,black-eyed peas,rinsed & drained
  • 1,15 0z can,garbano beans,rinsed & drained
  • 1,15 oz can,navy beans,rinsed & drained
  • 1,4 oz can,chopped green chilis
  • 1 jalapeno,chopped
  • 1 tbls.chili powder
  • 2 tsp.ground cumin
  • 1 tsp.dried oregano
  • 1 tsp.paprika
  • 1/8-1/4 tsp.ground red pepper
  • 1 cup sour cream

Directions
  1. Melt butter in a 5 Qt saucepan;add peppers,onions,garlic.Cook over medium heat,stirring occasionally,until softened (5-7 min.)
  2. Add all remaining ingredients,except sour cream.Continue cooking until mixture comes to full boil.(10-12 min.)
  3. Cover,reduce heat to low.Cook;stirring occasionally,until slightly thickened (45-50 minutes).Remove from heat.Stir in sour cream.Serve::if desired garnish with shredded monteray jack cheese and chopped fresh cilantro.
