How to make it

  • Put all ingredients in a large pot and cover with cold water.
  • bring to a boil.
  • skim off anything "nasty" that comes to the surface, like foam.
  • reduce heat and simmer for 2 hrs. do not exceed 2hrs when using chicken bones. the stock may begin to develop a bitter taste.
  • strain and throw away chicken and veggies.
  • freeze by the pint for another day.
