Chicken Stock

- 5 lbs chicken Bones shopping list
- 4 white onions - halved shopping list
- 4 carrots - whole shopping list
- 2 stalks celery - whole shopping list
- 1 bunch parsley shopping list
- 2 tomatoes - whole shopping list
- 4 bay leaves shopping list
- 12 peppercorns shopping list
How to make it
- Put all ingredients in a large pot and cover with cold water.
- bring to a boil.
- skim off anything "nasty" that comes to the surface, like foam.
- reduce heat and simmer for 2 hrs. do not exceed 2hrs when using chicken bones. the stock may begin to develop a bitter taste.
- strain and throw away chicken and veggies.
- freeze by the pint for another day.
