Chicken Stock Recipe
Good old basic chicken stock for all those recipes that need it. Will make a difference in the flavor of your dishes.

Ingredients
  • 5 lbs Chicken Bones
  • 4 White Onions - halved
  • 4 Carrots - whole
  • 2 stalks Celery - whole
  • 1 bunch Parsley
  • 2 Tomatoes - whole
  • 4 Bay Leaves
  • 12 Peppercorns

Directions
  1. Put all ingredients in a large pot and cover with cold water.
  2. bring to a boil.
  3. skim off anything "nasty" that comes to the surface, like foam.
  4. reduce heat and simmer for 2 hrs. do not exceed 2hrs when using chicken bones. the stock may begin to develop a bitter taste.
  5. strain and throw away chicken and veggies.
  6. freeze by the pint for another day.
