Your Choice Chicken Noodle Vegetable Stir Fry

- Boneless chicken - breasts or thighs cut down into large or small strips. shopping list
- 2 T. olive oil shopping list
- 1/2 onion diced. shopping list
- mushrooms if desired shopping list
- 2 cloves garlic shopping list
- vegetables = Your choice of three or more of the following: shopping list
- celery diced shopping list
- green peppers shopping list
- broccoli shopping list
- cauliflower shopping list
- diced carrots shopping list
- zucchini sliced shopping list
- asparagus shopping list
- sugar peas shopping list
- water chestnuts shopping list
- or cabbage chopped shopping list
- Or almost any other vegetable that you can think of. shopping list
- noodles - dried like Ramen or fresh noodles your choice shopping list
- fresh spinach shopping list
- Spices: shopping list
- garlic sea salt in Grinder shopping list
- black pepper in Grinder shopping list
- Your choice of the following spices depending on the flavor you are going for: shopping list
- For a south taste: shopping list
- A good meat rub with low salt content shopping list
- or a mix of cajun spices shopping list
- For an oriental feel: shopping list
- ginger shopping list
- Cinamon shopping list
- Chinese 5 spice shopping list
- a drop or two of soy sauce shopping list
- For a curry flavor add curry spices shopping list
- You may add nuts to the mix at the same time you add your vegetables. shopping list
- orange or half a lime may be added to change the flavor dramatically. shopping list
- Flavored jelly can be added to the chicken while the chicken and onions are cooking. shopping list
- Bottled sauce can be added in small amounts such as ginger sauce when sauteing the onions and chicken. shopping list
- If the pan seems to be getting dry and you think you need more oil in the pan, add just a touch of water to the bottom of the pan rather than adding more oil. shopping list
How to make it
- Base:
- Using a stir fry pan add oil to heated wok and then add chicken to cover bottom of wok.
- Add onions and saute on medium until onions and chicken are lightly browned.
- Add garlic and mushrooms to the mix and saute until mix is more of a golden brown.
- Push saute up side of wok and begin adding vegetables.
- Begin with the longer cooking vegetables like carrots and keep adding vegetables unitl still firm, but lightly browned. Do not add the spinach at this step.
- Once the vegetables look mostly done, push them up the side of the wok and add about 1 cup of water to the bottom of the wok. Break noodles to desired length if necessary. Add noodles to middle bottom of wok and cover. Allow noodles to steam for about 10 minures or until done.
- Mix all the ingredients together when noodles are done and then spice to taste for your flavor of the day.
- Cover entire mix with spinach as full as possible in wok. Cover and allow the spinach to steam. This should take about 5 minutes. The spinach will cook down and you will want to mix all the ingredients together well.
- Serve over rice if desired.
