Ingredients
  • 1lb Penne Pasta
  • 1lb Cooked Medium Shrimp
  • 1 Jar Newmans Own Marinara Sauce
  • McCormick Cajun seasoning liberal amount 2-4 tbsp or more!
  • Olive Oil, eye ball it
  • 2 cloves garlic chopped
  • a little chopped onion
  • 1/2 tsp Salt
  • 1/2 tsp Red Pepper flakes
  • 1/2 tsp Oregano
  • 1/4 cup stock, veggie,or chix
  • Parmesan Cheese

Directions
  1. Cook pasta as directed on box, I like pasta al dente so, if the box says cook 9-12 minutes, I go with 9. Once done drain and shock with cold water and set aside.
  2. In sauce pan pour olive oil and saute onion and garlic on a medium heat, once brown add 1/2 jar of Marinara stir add some cajun seasoning , oregano, and red pepper flakes continue to stir and add your stock and second 1/2 of sauce, add a little more olive oil and salt, lower heat and let simmer.
  3. In a bowl combine shrimp, with olive oil and coat with cajun seasoning, pour into your sauce, once fully mixed, add pasta to sauce and stir to coat evenly.
  4. Serve right away, with Parmesan over the top
