Chickpea Salad

- 2 (20oz) cans chickpeas shopping list
- 6 scallions, trimmed and finely sliced shopping list
- 2 tbs lemon juice shopping list
- 3/4-1 tsp salt shopping list
- 1/4 tsp freshly ground black pepper shopping list
- 2 tbs minced parsley shopping list
- 1 fresh green pepper, minced shopping list
- 1/4 tsp cayenne pepper shopping list
How to make it
- Pour contents of chickpea cans into pot and bring to a boil.
- Drain and discard liquid.
- In serving bowl, mix all ingredients and chick peas.
- Mix well and set aside, unrefrigerated for an hour.
- Mix again and serve cold or at room temperature.
- Refrigerate leftovers.
